Make some star blocks with a dark background fabric, add some plain dark fabric blocks, then quilt with light thread, fill in the larger blank areas of quilting with stippling in a thread to match the background fabric.
I like both these designs.

In both designs the seam lines of the centre block are used as a quilting motif for every other block.

This project file is based on one block, but with the background fabric used for some of the pieces.
The seam lines between the coloured pieces are used as the quilting motif.
I prefer dark backgrounds for any star block, because I can only see stars at night when the sky is dark, though I do know that there are stars out there when the sun is shining.

Love it … but wondering if I would quilt it with contrast thread, or match the background colour, or perhaps a mix of the two.

One block design, the one in the centre, modified many times.
The quilting design is the same as the pieced block, simply following the unused seam lines.
